For lunch, roasted a chicken from the farmer’s market, then used the drippings to sauté spinach with red pepper flakes and garlic

Basic Cous Cous
Ingredients
1 cup cous cous
1 cup chicken broth
1/2 medium onion
1 tbsp butter
salt & pepper
Directions
Melt the butter in medium saucepan on medium heat. When butter is done foaming, sauté the onions until soft, then turn up the heat to medium-high and add the cous cous. Cook, stirring frequently, until cous cous is just turning brown.
Take off heat and add the chicken broth. Let sit...
